A SUPER HEALTHY AND TASTY PIZZA RECIPE

February 9th is National Pizza Day but eating pizza doesn't mean you have to be unhealthy. Today is the chance to swap your classic pizza dough base for a healthy alternative. We've all heard of the cauliflower pizza, which if you haven't tried already I recommend you do, but I think I can go one better with this delicious sweet potato pizza. This simple, healthy and delicious alternative is perfect for curbing your pizza cravings, and makes for a great post barre workout meal.

My suggested topping of wilted spinach, smooth goats cheese, pointed red peppers and caramelised onion goes perfectly with the sweet, smooth base. However, topping options are limitless, so be as creative as you like! And yes, the base is dairy free and gluten free so what is not to love?

What you need: (For one pizza - serves 2)

For the base:
  • 2 sweet potatoes peeled and chopped (roughly 500g)
  • 100g Wholewheat Buckwheat flour
For the tomato layer:
  • 4 tablespoons of tomato puree
  • 1 tablespoon olive oil
  • 1 teaspoon garlic puree
  • A pinch of salt & pepper
  • 2 teaspoons Itallian herbs
My suggested topping:
  • 50g wilted spinach
  • 1 sweet red pointed pepper sliced
  • 50g soft goats cheese
  • 1 red onion
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Olive oil

What you need to do:

  • Preheat oven to 180°C and line a large baking tray with greaseproof paper.
  • Peel and chop your sweet potato into small chunks and then boil for around 20 minutes until the potato is soft.
  • Transfer the soft sweet potato to a mixing bowl and mash. Then add buckwheat flour with a pinch of salt and pepper and mix with a wooden spoon until well combined.
  • Place the sweet potato dough on the lined baking tray and shape into a circle roughly 0.5cm thick and smooth around the edges., before baking the dough in the oven for 15-18 minutes.
  • Meanwhile, prepare the tomato layer by mixing your tomato and garlic purees with the olive oil, salt, pepper and herbs.
  • Next prepare the toppings, chopping the red pepper into strips and wilt the spinach until soft.
  • To make the caramelised onions, slice your red onion finely and place into a large pan with a little olive oil and cook over a medium heat for about 20 minutes, until softened. Then, reduce the heat and add the balsamic vinegar and honey, mixing through to create a sticky consistency and remove from the heat.
  • Once the dough has finished baking, remove from the oven and spread over the tomato layer evenly on top.
  • Then, start placing the red peppers and spinach on top before spooning on small amounts of the caramelised onion and finally crumbling your goats cheese, making sure to spread equally.
  • Bake in oven for 10-12 minutes until golden brown and enjoy!
